Cucumber and Avocado Soup

Ingredients:

  • 2 ripe avocados

  • 2 cucumbers, peeled and chopped

  • 1 garlic clove, minced

  • 1 cup plain Greek yogurt

  • 1/4 cup fresh lime juice

  • 1/4 cup chopped fresh cilantro

  • Salt and pepper to taste

  • Optional garnish: sliced cucumber, chopped cilantro


Instructions:

  1. Cut the avocados in half, remove the pit, and scoop the flesh into a blender or food processor.

  2. Add the chopped cucumbers, minced garlic, Greek yogurt, lime juice, and cilantro to the blender or food processor.

  3. Blend or process until the mixture is smooth and creamy.

  4. Season with salt and pepper to taste.

  5. Chill the soup in the refrigerator for at least 30 minutes before serving.
